Course Title: COMMERCIAL FOOD PREPARATION AND MENU PLANNING
The complex processes of successfully planning, producing, and serving meals to customers in a commercial restaurant setting will be identified. The course will focus upon the multi-faceted issues involved in planning and executing a menu. The relationships between menu planning and all other commercial restaurant functions will be explored. The course will culminate in student groups planning and executing a series of meals for guests.
